Sometimes when you make a mistake following a recipe it becomes an inedible disaster and sometimes you come out on top with a great new recipe!
That is exactly what happen when I went to make the Coconut Chocolate Mound Balls from Mommy Run Fast. I don’t like coconut so I was planning to make the recipe just skipping the coconut and replacing the unsweetened cocoa with JuicePlus Complete Chocolate for added nutrients. When I went to put the vanilla extract in you can likely guess what I put in my mistake….yup mint extract instead. Luckily I really like mint chocolate anything so these were a happy mistake and I’m sharing the recipe below for you.

- 1 cup pitted dates
- ½ cup peanuts
- ½ almonds
- 1 scoop JuicePlus Complete Chocolate (or 3 tbsp unsweetened cocoa)
- 1 tsp mint extract
- Combine all ingredients in a food processor until well blended. Then form into balls and place in the refrigerator.
