I want to say I enjoy cooking, but I can’t quite say that with complete confidence. What I can say with complete confidence is that I LOVE FOOD and I LOVE TO EAT! I have a big appetite and always have. You know the word “hangry”, well it’s real and it happens when I am not fed at proper intervals throughout the day. Just ask my poor husband or kids who have to deal with me when I’m hungry. If you have kids you know you don’t leave the house without snacks, well my husband knows the kids needs snacks and so do I, hahaha. There are times when I know I’m “hangry” and I will actually say to my husband “leave me alone until I eat or I will lose my shit.” Not even kidding, not even a little bit. So really to me cooking is just a means to an end.
What I do like about cooking is finding new recipes to try and when they are delicious and easy to make I like them even more! Those are the ones that get added into the rotation and will certainly make an appearance again and again.
One night I must have been super motivated because I work up and made two new recipes. Not sure where the motivation came from, but I’m guessing it was because life had been so crazy busy and I hadn’t had time to cook anything new that I was simply bored with what we were eating.
So, I had been planning to try Mommy Run Fast’s baked Pumpkin Baked Oatmeal for a few weeks now and during my cooking motivation decided to finally make it. I am so glad I did because it was delicious, easy to do, and was a great make ahead breakfast for the week. I don’t know why I haven’t tried doing these before, because they make my life so much easier in the morning when I’m running around trying to get myself ready for work and get two kids out the door. It was so good, I’ve made it twice already and now I want to look for some more oatmeal bake recipes. You know with all the free time I have to spend looking up recipes and cooking, haha!
Then we had some left over sweet potatoes that we needed to cook asap or I would end up throwing them out, and my husband recently bought a 5lb bag of apples so this Apple and Sweet Potato Bake was perfect timing. This recipe was found on Pinterest. Seriously, my family would be eating the same thing every day if it weren’t for Pinterest recipes. Chopping the sweet potatoes and the apples was the hardest part of this recipe and that was only because I was doing it on a night where we all got home late from work and school, and the baby was hungry and tired (yes, I passed on hangry to my children). Despite my circumstances this was a really easy recipe to follow and it was super delicious. This one came from Live Simply and will definitely be making another appearance in my house!
