Simple 5 ingredient salad

Are you ready for the easiest salad ever?? Well I’ve got it right here for you and I’m not a huge salad fan unless someone else makes it for me so trust me when I say this is easy and a great side dish to any meal.

I’ve been taking recipes from The Earth Diet book for the last few weeks and they have yet to disappoint me so I’m just going to keep trying them out for a while. In it, Liana Werner-Gray, the author shares her journey about healing herself with the power of nature after being addicted to sugary processed food and finding herself in the hospital with a tumor and precancerous cells.

I believe in the power of modern medicine, but I also believe a lot of our problems stem from a problem with our nutrition. I see it with my kids in their behavior and the way they act when they have been given too much sugar and processed foods. Their attitudes change, the demeanor is different and they are simply difficult children. I also see it in myself when I’m not eating healthy and filling my body with junk. I’m tired, sluggish, moody and downright miserable. Also my stomach isn’t right and my digestion is all messed up.

My husband is currently in a boot due to a stress fracture so it has us planning a bit more and focusing on healthier eating since he cannot run right now (but we hope he’s back soon!). I’ve had Liana’s book for a few months but really hadn’t dug into it until now. I’m glad I did because the recipes I’ve made so far are easy, quick and delicious.

This recipe was originally her 4 Ingredient Salad, but she recommended a 5th ingredient to make it a 5 Ingredient Salad and that’s what I went ahead and made for myself. I never bought fresh herbs before so it was a first and I was nervous about not eating them in time before they went bad, but I used them all and will definitely buy some more of them again for this salad and for cooking.

5 Ingredient Salad (recipe courtesy of The Earth Diet)
(Serves 1)

  • 1 cup fresh cilantro
  • 1 cup fresh parsley
  • ½ cup sliced cucumber
  • 1 avocado cubed
  • ½ lemon

Chop everything up except the lemon – Squeeze the lemon over the greens and enjoy!
